Bacon, Mushroom & Chard Pasta

This is the first time i’ve ever cooked and eaten chard. The leaves are very much like spinach and the stems remind me of celery. They are very different and so require different lengths of cooking time. It is very nutritious and suits a simple pasta meal like this one. Its quick to make, tasty and healthy. The basic principle is the same for whatever vegetables you choose to use, so if you don’t want chard, then use spinach, or if you prefer other vegetables, then try courgette, pepper or kale instead.

To Prepare:
  1. Peel and thinly slice the onion.
  2. Peel and crush the garlic.
  3. Add the onion and garlic to a large frying pan with the olive oil.
  4. Separate the leaves from the stems of the chard. Slice the stems in to matchsticks and tare the leaves in to large pieces.
  5. Slice the bacon in to thin strips.
To Cook:
  1. Heat the frying pan over a medium heat and gently fry the onion and garlic, stirring regularly for 3 minutes.
  2. Meanwhile fill and boil the kettle to cook the pasta and weigh out the pasta shapes in to a large saucepan.
  3. Once the kettle is boiled, pour plenty of boiling water over the pasta shapes and leave to simmer on the hob for 10-12 minutes according to pack instructions.
  4. After 3 minutes are up on the onion and garlic, add the bacon strips and chard stem matchsticks to the pan and continue to fry for another 3 minutes.
  5. Remove the stalks from the mushrooms and slice.
  6. Cut the tomatoes in to bite size pieces.
  7. Add the mushrooms and tomatoes to the frying pan and continue frying, stirring regularly for another 3 minutes.
  8. Once this is up, check that all the vegetables are cooked and starting to soften, before adding the chard leaves to the pan and stirring regularly until they wilt and soften.
  9. Remove the frying pan from the heat and season with a little salt and black pepper if you wish.
  10. Once the pasta is cooked, drain the water off and divide it between 2 bowls. Top with the bacon and vegetable mix. If you are feeling like you deserve a treat, then you could always finish the dish with some grated parmesan or other cheese of your preference. Enjoy.
