Barley Fish Paella

To Prepare:
  1. Peel and dice the onion.
  2. Peel and crush the garlic.
  3. Add the oil, garlic and onion to a large deep frying pan.
  4. Make up the stock and weight out the barley.
To Cook:
  1. Heat the pan over a medium heat and fry the contents for 5 minutes, stirring occasionally.
  2. Sprinkle in the smoked paprika and add the barley. Continue to fry for 30 seconds, stirring regularly.
  3. Lower the heat to medium and pour in the stock.
  4. Add the tinned tomatoes to the pan and stir. Leave to simmer and set a timer for 25 minutes, stir occasionally.
  5. Meanwhile top and tail the courgette. Slice in to quarters lengthways, then each strip in to bite size chunks.
  6. Once prepared, add the courgette to the paella and stir.
  7. Top and tail the green beans and slice in to 3cm lengths.
  8. Once the 25 minute timer is up, add the green beans to the paella and stir. Set timer for 3 minutes.
  9. Once the timer is up, stir through the fish medley and leave for a further 3 minutes or until the fish is cooked.
  10. Divide the paella between 2 bowls and enjoy.
