Blue Cheese & Beetroot Lentil Salad
This speedy and tasty salad is great for a warm summer evening. Yes it is quite a high fat meal, but there is some definite nutritional value to it as well. Adding walnuts not only gives it an extra crunch for texture, but also adds some very important essential fatty acids. These are good fats and this is why including some fat in your diet is a good thing. Blue cheese is an acquired taste and so if you aren’t a fan, then swap it for a cheese you like. Feta is a good lower fat substitute or goats cheese works well too. The lentils bulk it out and add a little extra protein, This is the kind of meal you eat when you just need some cheering up and to enjoy a meal. Yes, I definitely added more cheese than is a healthy size portion, but I just know if I had only used part of the block, I would have returned to the fridge and ate it later in the evening instead. That was the kind of mood I was in when I made this.
