  1. Pre-heat the oven to 200 degrees celsius.
  2. Sprinkle the walnuts on to a baking tray and break them in to small pieces. Place in the oven to roast for 10 minutes.
  3. Meanwhile prepare the rest of the salad by shredding the lettuce and placing it in a large bowl.
  4. Cut the cooked beetroot in to bite size pieces and add to the bowl.
  5. Cut the cheese in to bite size pieces and add to the bowl.
  6. Warm the lentils through for a couple of minutes in the microwave until hot and then add them to the bowl.
  7. Mix the vinegar and honey together and drizzle over the salad bowl.
  8. Give everything a good mix to make sure it is evenly spread out.
  9. Divide the salad between 2 plates and once the walnuts are done, finish by sprinkling them over the top. Enjoy.
