Cabbage & Radish Stir-Fry with Mackerel

Generally I eat radish raw, sliced up and added to salads. I wasn’t aware until recently that you can also cook them. They have been on special offer lately in Tesco, so i’ve been looking for inspiration on what to do with them. I came across a suggestion to add them to a stir-fry, which sounded quick and simple, so I thought I would give it a try. When cooked it still maintains its crunch, but its flavour intensifies. It is something I will definitely look to do again. I serve this with grilled mackerel fillets as my protein source, but as always with a stir-fry this is flexible. Chicken, salmon, tofu, the choice is yours.

To Prepare:
  1. Peel and grate the garlic and ginger.
  2. Add both to a wok with the coconut oil.
  3. Thinly slice the chilli
  4. Trim the spring onions and slice in to thin lengths.
  5. Top and tail the radishes before thinly slicing them in to rounds.
  6. Remove the base and outer leaves from the cabbage before shredding.
  7. Remove the stalks from the mushrooms, then slice.
  8. Have all other ingredients to hand.
To Cook:
  1. Heat the wok over a high heat and stir the contents regularly. Once it is hot and starting to sizzle, add all the other vegetables in to the wok.
  2. Fry for 5 minutes stirring regularly.
  3. Turn the grill on to high and place the mackerel fillets, skin side up, on the grill pan.
  4. Once the 5 minutes are up on the vegetables, add in the noodles to the wok and place the grill pan under the grill. Leave the fish to cook for 3 minutes.
  5. Meanwhile keep stirring the contents of the wok and after the noodles have been frying for 1 minute and have softened, add in the coriander, soy sauce and lime juice.
  6. Remove the wok from the heat, stir well, then divide the mixture between 2 bowls.
  7. Once cooked, top each bowl with 2 mackerel fillets and enjoy.
