Cardamom Spiced Roast Chicken, Sweet Potato, Pear, Spinach & Walnuts
I took inspiration for this recipe from one I found on The Happy Foodie. It sounded really tasty but I personally needed more veg and carbohydrates to make it a complete meal. I decided to add sweet potatoes and spinach, which both compliment the ingredients already used. Its a lovely mix of textures and tastes and a really enjoyable meal to eat. Simple too as you only need one pan and can shove it straight in the oven. The trickiest step is extracting the cardamom seeds from their pods and grinding them. I broke them open with a knife and then ground the seeds in my Vitamix, but you can grind them by hand using a pestle and mortar, it just takes more time and effort.
