Curried Chicken & Nectarine Salad
This creamy salad is incredibly good for you as it is packed full of nutritious ingredients, providing 3 of your five a day vegetables and fruits, while also being high in protein. It is a substantial salad that can be thrown together in minutes, stores well, so can be made in advance and is high in fibre so keeps you feeling fuller for longer. Serve it for lunch or dinner, it will be sure to satisfy. My biggest piece of advice would be to make sure your nectarines are ripe so that the sweetness from them balances well with the spice of the curry paste. It is only mildly spicy thanks to the yogurt and the fruit. If you don’t have nectarines, use peaches instead.
