Curried Chicken & Nectarine Salad

This creamy salad is incredibly good for you as it is packed full of nutritious ingredients, providing 3 of your five a day vegetables and fruits, while also being high in protein. It is a substantial salad that can be thrown together in minutes, stores well, so can be made in advance and is high in fibre so keeps you feeling fuller for longer. Serve it for lunch or dinner, it will be sure to satisfy. My biggest piece of advice would be to make sure your nectarines are ripe so that the sweetness from them balances well with the spice of the curry paste. It is only mildly spicy thanks to the yogurt and the fruit. If you don’t have nectarines, use peaches instead.

  1. Measure out the yogurt in to a small bowl and stir through the curry paste.
  2. Drain the chickpeas and add to the yogurt.
  3. Slice the cooked chicken in to thin strips and place in a separate, larger bowl that will fit the whole salad.
  4. Grate the zest from the lime and slice in half.
  5. Squeeze the lime juice over the sliced chicken, then sprinkle over the zest.
  6. Cut each nectarine in to quarters and separate from the stone. Slice in to bite sized pieces.
  7. Add the salad leaves and sliced nectarine to the bowl with the chicken and stir.
  8. Tip the chickpeas and yogurt in to the salad and stir well.
  9. Divide the salad between 2 plates.
  10. Shred the coriander and sprinkle it over the top along with the flaked almonds if using. Enjoy.
