Feta & Beetroot Salad
Cheese and beetroot go so well together, especially feta. One of the good things about feta is that it is lower in fat than most other cheeses and so contains less calories. It is also an excellent source of calcium, phosphorus and B vitamins, which makes it great for maintaining healthy strong bones. It is one of my more healthy treat foods that I love to eat and this quick, tasty and nutrient packed salad is the perfect way to include it in your diet. It can be made in advance and stored in the fridge and any leftovers make a good packed lunch the next day.

Ingredients
- 100 g couscous
- 200 ml boiling water
- 200 g cooked beetroot approx.
- 1 pack feta
- 1 baby gem lettuce
- 3 spring onions
- 10 cm cucumber
- 1 small handful mint leaves only
- 50 ml natural yogurt
- 2 tbsp balsamic vinegar

Instructions
- Firstly make the couscous by weighing it out in to a large bowl, big enough to fit the whole salad
- Cut the feta in to bite size chunks.
- Cut the beetroot in to bite size pieces.
- Shred the lettuce.
- Trim and peel off the top layer of the spring onions. Slice in to small pieces.
- Cut the cucumber in to bite size pieces.
- Shred the mint leaves.
- Add all the prepared ingredients to the bowl with the couscous and stir well.
- Spoon in the yogurt and vinegar and mix.
- Divide between 2 bowls and enjoy.
