Harissa Spiced Aubergine & Eggs
Sometimes its nice to have a break from eating meat for my protein source. Eggs and chickpeas are both good vegetarian sources of protein so this meal is still really balanced and nutritious even without the meat. It serves as a good reminder that vegetarian food can still be incredibly tasty and filling. I was inspired to make this dish from a recipe I found on Tesco and if I’m honest i’ve barely changed it. I’ve just used less oil, more couscous and added a chilli and pepper. The flavour from the Harissa paste gives it an almost smoky taste and the chickpeas give it some great texture. It’s definitely not the prettiest of meals to present but it sure does hit the spot flavour wise.
