Healthy Sausage & Chips
Sometimes you just need a plate of food that takes you back to childhood. Eating food is not meant to be a chore. It’s meant to be fun. It’s meant to bring back happy memories and be a sociable occasion that you can share with your friends and family. It’s funny really because when I was a child I would never have chosen to eat sausages and chips, but now when eating it I can’t help but feel I missed out on so much. To be fair this plate of sausage and chips is nothing like that beige plate of fried, greasy, unhealthiness that it would have been as a child, but then that goes to show that healthy food can still be fun, comforting and tasty!

Healthy Sausage & Chips
Instructions
Preheat the oven to 200 degrees celsius.
Peel and slice the vegetables in to finger length chip shapes.
Toss the vegetables in the olive oil and season with salt and pepper.
Spread out on a large, flat baking tray and place in the oven. Set timer for 15 minutes.
Slice the onion in to wedges and separate the sausages.
Once the timer is up. Remove the tray from the oven. Give it a good shake to rearrange all the vegetables and then scatter over the onion and sausages.
Return the tray to the oven and cook for a further 30 minutes.
Just before it's ready to serve, make up the gravy by mixing the gravy granules with 100ml boiling water.
To serve, pile up the vegetables and sausages on a plate and pour over the gravy. Enjoy.
