To Prepare:
  1. Slice the bacon in to thin strips.
  2. Cut the mushrooms in to quarters.
  3. Crack the eggs in to a small bowl, pour in the milk, season with a little salt and black pepper if you like and whisk well to combine.
  4. Grate the cheese.
To Cook:
  1. Preheat the grill to high.
  2. Place the olive oil and bacon in an oven proof frying pan and heat over a medium-high heat. Fry the bacon for 3-4 minutes until it is cooked.
  3. Add in the mushrooms and stir well.
  4. Pour in the egg mixture and make sure it is evenly spread out.
  5. Leave for 1 minute to start setting, carefully run a flat spatula or pallet knife around the edge of the pan occasionally to ensure that the omelette doesn’t stick.
  6. Once the mixture is starting to set, sprinkle over the grated cheese and transfer the pan to under the grill. Make sure you remember to turn off the hob.
  7. Grill the top of the omelette for around 5 minutes or until it is completely set and the cheese is melted to your liking.
  8. Slide the omelette out of the pan and on to a plate. Cut in half and serve with some toast or a bagel.
