Mediterranean Halloumi Traybake

This is the perfect one pan dinner. It does take some time to make though, so plan ahead. Its a comforting bowl of cheesey goodness, great for a vegetarian diet or even just a meat free meal. The chickpeas help to bulk up both the carbohydrate and protein in the dish, making it a filling and nutritious option. I love halloumi so I enjoyed this recipe very much. I hope you like it too.

  1. Preheat oven to 180 degrees celsius.
  2. Cut the potatoes in half, quarters if larger,
  3. Peel and slice the onion in to thick wedges.
  4. Add both to a roasting tray and drizzle over the oil. Toss to coat and season with a little salt and pepper.
  5. Place in the oven and set a timer for 15 minutes.
  6. Meanwhile, thickly slice the pepper and courgette.
  7. Peel and slice the garlic cloves.
  8. Once the timer is up, remove the tray from the oven and add the garlic, pepper and courgette.
  9. Sprinkle over the basil and stir well.
  10. Return to the oven and set a timer for 20 minutes.
  11. Meanwhile, cut the tomatoes in to chunks and get the chickpeas ready.
  12. Once this timer is up, again remove the tray and add the tomatoes and chickpeas.
  13. Mix well and return to the oven for a final 10 minutes.
  14. Slice the halloumi in to chunks.
  15. With 5 minutes left, turn the grill on to high.
  16. Once the 10 minutes are up, remove the tray from the oven and lay the halloumi slices on top of the vegetables.
  17. Place under the grill and leave for 5 minutes or until the cheese is suitably melted.
  18. To serve, divide between 2 bowls and enjoy.
