Smoked Salmon & Strawberry Salad

This is a lovely, summery and light salad. Really simple to make, it contains a great variety of textures and flavours. The soft, sweet strawberries perfectly compliment the crisp, peppery celery. I’m not a fan of celery on it’s own but it really works in this salad. Serve it with a fresh brown roll to mop up the remaining salad dressing or bulk it out with some couscous.

Instructions
  1. Firstly, make the salad dressing by mixing together all the ingredients in a small bowl. Set aside while you assemble the salad.
  2. Place the rocket in a large bowl.
  3. Cut the salmon in to thin strips and add to the bowl.
  4. Top and tail the celery stalks and thinly slice. Add to the salad bowl.
  5. Remove the tops from the strawberries and cut in to quarters. Add to the bowl.
  6. Pour over the salad dressing and stir well.
  7. To serve, divide the salad between 2 bowls and enjoy.
