Spicy Chorizo, Bean & Avocado Rice Bowl

Chorizo is one of my favourite ingredients! Unfortunately however, it is not the most nutritious, as it is highly processed. It also contains a higher amount of fat and less protein than chicken or fish. In moderation though, there is no harm in including it in your diet, so long as you balance it out with plenty of other nutritious ingredients. It partners really well with beans, like in this recipe, which boosts your protein intake. The addition of avocado helps to give the meal a creamy texture and counteracts the spicy kick from the chorizo and the chilli. It is one of those throw together meals that doesn’t take long and is great for after a hard training day as it requires minimal effort.

Spicy chorizo, bean and avocado rice bowl
Instructions
T prepare:
  1. Peel and crush the garlic and add them to a frying pan with the olive oil.
  2. Slice the onion and pepper in to thin strips. Add them to the pan.
  3. Peel the skin from the chorizo and slice in to rounds about the thickness of a pound coin. Slice each round in half.
  4. Peel and stone the avocado and slice in to small chunks, place them in to a small bowl.
  5. Slice the chilli in to thin strips and shred the coriander.
  6. Add them to the bowl with the avocado and pour in the lime juice. Mix and leave to one side.
To cook:
  1. Place the rice in a pan of boiling water and leave to simmer for 10-12 minutes.
  2. Heat the frying pan over a high heat and when it starts to sizzle add in the chorizo. Fry, stirring frequently for 2 mins then add in the cumin. Stir for another minute.
  3. Pour in the tin of beans and lower the heat to medium. Leave the mixture to bubble away until the rice is cooked and ready to serve.
  4. Serve the chorizo mixture on top of the rice and finish with the avocado mixture.
