Stir-Fried Turnip, Cabbage & Mushrooms
The star of this dish is the stir-fried vegetables. The protein and carbohydrate sources can be switched around to suit your likes and requirements. Bare in mind though that the vegetables are quite dry, so you may need to add some moisture or flavouring to it. Next time I make it I think I will cook the rice in stock rather than plain water, as it felt like it was just lacking in something. It really doesn’t matter what protein source you choose to use with this, for ease you could simply dice up some chicken breast and add it to the vegetables when you add the turnip. Play around and put your own interpretation on the dish. Its just a really quick and simple recipe, great for when you don’t have much time.

Stir-Fried Turnip, Cabbage & Mushrooms
Instructions
To prepare:
Peel and thinly slice the onion.
Add it to a large frying pan with the olive oil
Peel and thinly slice the garlic, thinly slice the chilli.
Peel and dice the turnip.
Weigh out the rice in to a small saucepan and fill and boil the kettle.
Place a griddle over a high heat to heat through.
To cook:
Heat the frying pan over a high heat. Fry the onions for around 3 minutes, stirring occasionally.
Sprinkle in the cumin seeds and continue to fry for 30 seconds.
Now add the chilli and garlic and fry for a further 30 seconds.
Tip in the diced turnip and continue to fry.
Pour the boiling water in to the small pan with the rice and leave to simmer on the hob for 10-12 minutes.
Chop up the cabbage and transfer it to the pan with the turnip, stir well. Continue frying for a final couple of minutes.
Remove the stalks from the mushrooms and cut in to quarters.
Add the mushrooms to the frying pan before lowering the heat and continuing to cook for 8-10 minutes.
Meanwhile, cook the steaks on the hot griddle to your liking.
Once the rice is cooked, strain off any excess water before dividing it between 2 bowls.
Top with the cooked vegetables and steak. Enjoy.
