Thai Green Turkey Meatball Curry
If not careful, turkey can be really dry and not pleasant to eat. This is because it is an incredibly lean meat. It is a great substitution for chicken and if cooked well is very tasty. I buy these meatballs ready-made from Muscle Food, but if you have the time and skill then try making your own. Beef meatballs would be just as tasty in this recipe and don’t feel that you have to use green curry paste. Any colour would work. The same goes for vegetable combination. You could swap the spinach for kale, pepper for courgette, green beans for babycorn. It’s an incredibly flexible recipe that takes minimal time and effort to make. Great for using up any leftover vegetables.
