Thai Green Turkey Meatball Curry

If not careful, turkey can be really dry and not pleasant to eat. This is because it is an incredibly lean meat. It is a great substitution for chicken and if cooked well is very tasty. I buy these meatballs ready-made from Muscle Food, but if you have the time and skill then try making your own. Beef meatballs would be just as tasty in this recipe and don’t feel that you have to use green curry paste. Any colour would work. The same goes for vegetable combination. You could swap the spinach for kale, pepper for courgette, green beans for babycorn. It’s an incredibly flexible recipe that takes minimal time and effort to make. Great for using up any leftover vegetables.

Instructions
To prepare:
  1. Peel and dice the onion. Thinly slice the chilli.
  2. Peel and grate the garlic and ginger.
  3. Add everything prepared so far to a large lidded frying pan with the coconut oil.
  4. Slice the pepper in to bite size pieces.
  5. Measure out the coconut milk.
To cook:
  1. Heat the frying pan over a medium-high heat and fry it's contents for 3 minutes.
  2. Add the curry paste and stir constantly for 30 seconds.
  3. Add in the meatballs and pepper chunks and keep stirring for 2 minutes.
  4. Lower the heat and pour in the coconut milk. Cover the pan and leave to simmer for 15-20 minutes.
  5. Remove the ends from the green beans and slice in to thirds.
  6. Shred the coriander and have the kale to hand.
  7. Make the rice by adding it to a pan of boiling water and leave to simmer for 10-12 minutes.
  8. 5 minutes before time is up on the curry, add the green beans, coriander and kale to the pan and give it a good stir. Turn the heat up so that the mixture is bubbling and leave the lid off.
  9. When the rice is cooked, strain and serve.
  10. Before serving the curry, season it with the soy sauce and lime juice. Serve it on top of the rice. Enjoy.
